Sylvia's Apple Crumble

Thanks to Sylvia from Manawatu-Wanganui for sharing her recipe for apple crumble. This recipe is a bit different from your traditional apple crumble, with crumble underneath the apple mixture, as well as on top! A tasty way to enjoy fresh new season apples on a chilly winter night.

Ingredients

Apple filling:

  • 8 freshly picked apples from tree, peeled, cored and diced
  • 1/4 cup of water
  • 1tsp ground cinnamon
  • 1tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 cup caster sugar

Crumble Topping

  • 1 cup plain flour
  • 1/2 cup brown sugar
  • 1 cup desiccated coconut
  • 75g butter, cut into cubes
  1. Place apples and water into large sauce pan.
  2. Heat apples, continuously stirring.
  3. Turn heat down and keep stirring so it does not catch on the bottom.
  4. Once the apples have softened, add cinnamon,nutmeg, ground cloves and 1/4 cup caster sugar.
  5. Stir until the sugar is dissolved.
  6. Set aside to cool.
  7. Mix crumble ingredients together using your finger tips to create a coarse bread crumb feel.
  8. Press half of the mixture firmly into lightly greased sandwich tin.
  9. Then place the apple mixture evenly over.
  10. Sprinkle the rest of the mixture over the apple and bake in a preheated oven to 180C for 45 minutes until topping is lightly golden brown.
  11. Serve with whipped cream or ice cream.
  12. Cover and will keep for up to 4 days in the fridge.
