Thanks to Sylvia from Manawatu-Wanganui for sharing her recipe for apple crumble. This recipe is a bit different from your traditional apple crumble, with crumble underneath the apple mixture, as well as on top! A tasty way to enjoy fresh new season apples on a chilly winter night.
Ingredients
Apple filling:
- 8 freshly picked apples from tree, peeled, cored and diced
- 1/4 cup of water
- 1tsp ground cinnamon
- 1tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 cup caster sugar
Crumble Topping
- 1 cup plain flour
- 1/2 cup brown sugar
- 1 cup desiccated coconut
- 75g butter, cut into cubes
- Place apples and water into large sauce pan.
- Heat apples, continuously stirring.
- Turn heat down and keep stirring so it does not catch on the bottom.
- Once the apples have softened, add cinnamon,nutmeg, ground cloves and 1/4 cup caster sugar.
- Stir until the sugar is dissolved.
- Set aside to cool.
- Mix crumble ingredients together using your finger tips to create a coarse bread crumb feel.
- Press half of the mixture firmly into lightly greased sandwich tin.
- Then place the apple mixture evenly over.
- Sprinkle the rest of the mixture over the apple and bake in a preheated oven to 180C for 45 minutes until topping is lightly golden brown.
- Serve with whipped cream or ice cream.
- Cover and will keep for up to 4 days in the fridge.
