Radishes are one of the easiest and quickest crops to grow, and come in a huge range of colours, shapes, sizes and flavours – there is possibly a variety to suit every gardener. While radishes are traditionally a quintessential salad crop, the introduction of oriental varieties in recent years has seen their use increase in cooking and preserving.
Ingredients:
- Fresh radishes - 25 small
- 1 cup sour cream
- 1/2 cup of feta cheese
- 1 tsp lemon zest
- 3 tbsp lemon juice
- 1/4 tsp salt
- Pepper to taste
- 1/3 cup of chopped herb - dill, parsley, basil or other
- Wash radishes (unpeeled)
- Dice or grate radishes
- Mash feta together sour cream in a large bowl
- Add zest and lemon juice, salt & pepper & radishes.
- Mix and taste adjust seasonings.
Serve with small whole radishes, carrot sticks, cucumber, broccoli, rice crackers or roast wedges.
