Fragrant Fruit Salad

If you are unable to find dark muscovado sugar then use brown sugar or even palm sugar, but the flavour of the muscovado is hard to replace. It's worth asking your supermarket to stock it.

Ingredients:

  • 1/2 cup (125g) dark muscovado sugar
  • 1 cup (250ml) water
  • 2 star anise
  • 1 vanilla pod, split in half lengthways
  • 2 kaffir lime leaves, finely sliced
  • 2 tablespoons lime juice
  • 1/2 rock melon, peeled and chopped
  • 400g watermelon, peeled and chopped
  • 1 papaya, peeled and chopped
  • 1 pineapple, peeled and core removed, chopped
  • 1 punnet strawberries, hulled and sliced
  • small mint leaves to garnish
  1. Place sugar and water in a small saucepan and heat, stirring until sugar has dissolved.
  2. Add star anise, vanilla, kaffir lime leaves and lime juice.
  3. Gently simmer for 5 minutes, then set aside to allow flavours to infuse.
  4. Arrange fruit on a platter or in individual serving bowls.
  5. Strain syrup into a jug and drizzle over fruit.
  6. Scatter with mint leaves.
