Emma's raw lemon cheesecake slice

Got loads of lemons? Make the most of your homegrown harvests with this tasty raw lemon cheesecake slice shared by Emma.

Ingredients

Base
1 cup raw cashews
1 cup desiccated coconut
1 cup pitted dates
Pinch of salt
1 tbs lemon juice

Top layer
1 cup cashews, soaked overnight in water then drained
1/2 cup coconut oil, melted
1/2 cup maple syrup
Zest of 2 lemons
1/4 cup lemon juice

METHOD

  1. Blend all base ingredients in food processor until they come together.
  2. Press into a lined slice tin and freeze.
  3. Blend all top layer ingredients until smooth.
  4. Pour over base and freeze until set.
